Noodles - Mushrooms - Broccoli

Asian Noodles with Roasted Broccoli & Oyster Mushrooms

Quick, saucy, satisfying. This dish hits that sweet spot between comfort food and something that feels kind of healthy. Roasted broccoli brings the char, oyster mushrooms add chew and umami, and the sauce? Slick, salty, buttery magic.

Ingredients

Base

  • Noodles of your choice — ramen, udon, soba, whatever you’ve got

  • 1 head of broccoli, cut into florets

  • A big handful of oyster mushrooms, torn or sliced

  • Neutral oil (for roasting/frying)

Sauce

  • 2–3 cloves of garlic, finely chopped or grated

  • A thumb of fresh ginger, grated

  • A pinch of chili flakes (or more if you like heat)

  • A good knob of butter (yes, butter)

  • 1 tsp sesame oil

  • 1 tbsp dark soy sauce

  • 2 tbsp light soy sauce

  • 1 tbsp mirin

  • 1 tsp rice vinegar

Method

First: Broccoli

Toss your broccoli florets with a little oil and salt. Roast at 200°C until the edges are crispy and browned - around 20 minutes. Give them a shake halfway through. Set aside when done.

Mushrooms

While the broccoli’s going, get a skillet hot with a splash of oil. Toss in the oyster mushrooms and fry until golden and slightly crisp on the edges. Don’t crowd the pan - let them sit and get some colour before stirring. Season lightly with salt. Remove from pan and set aside.

Sauce

Same pan (no need to clean it — you want that flavour). Lower the heat a touch. Add butter, and once it’s melted, toss in the garlic, ginger, and chili flakes. Let it sizzle gently until fragrant — about 30 seconds to 1 minute.

Now stir in your sesame oil, both soy sauces, mirin, and rice vinegar. Let it bubble for a minute to bring it all together. Taste. You want balance — salty, tangy, just a touch sweet. Adjust if needed.

Noodles

Cook your noodles according to the packet. Drain and toss them straight into the pan with the sauce. Use tongs to coat everything well.

Add the roasted broccoli and mushrooms back in. Toss again. You want everything glossy and sauced-up.

To Serve

Pile the noodles into bowls. Top with any crispy mushroom or broccoli bits from the pan - trust me.

Optional but encouraged:

  • Sesame seeds (definitely do this)

  • A soft egg

  • Fresh herbs (like coriander or Thai basil)

  • Extra chili flakes or chili oil on top
